The Fort Collins food truck scene is nothing short of amazing. With the weekly Food Truck Rally in the summer to our year-round food truck offerings, generally found at local watering holes, food trucks are always in season.

Momos is a new food truck from Fort Collins, just recently celebrating a year in business. Momos, a Veteran owned and operated company, is named after a sumptuous South Asian dumpling, their main menu item. Their momos are always fresh and made with natural ingredients, herbs and spices. And don't get us started on their sesame-tomato dipping sauce, one of the secrets to how good their momos are.

We spoke with Sulav Magar, Momos' owner and head chef to learn more about Sulav and this Nepali dish.

What do you love about Fort Collins

Fort Collins has a magnetic charm that resonates with me. I love the relaxing laidback lifestyle, the plethora of outdoor activities, and, above all, the friendly people.

What are your top 3 favorite activities to do in Fort Collins?

  1. I love spending tranquil days fishing our local waters, or enjoying water activities on the Poudre River, we have a yearly tubing tradition where we float the river through town and by Gateway Natural Area. There's something incredibly calming about being surrounded by nature.
  2. Exploring new public areas is another favorite pastime; the city's parks and open spaces never cease to amaze.
  3. Lastly, the vibrant brewery scene in Fort Collins is a must-experience, offering a taste of the city's rich culture and community spirit.

What "can't miss" activity/restaurant/place would you tell a first-time visitor to go?

In my opinion, the "can't miss" activity would undoubtedly be the vibrant Tour de Fat—a celebration that encapsulates the city's lively spirit. When it comes to satisfying your cravings for fast-casual Asian cuisine, my go-to recommendation is Chopstickers. And, of course, a visit to Horsetooth Reservoir is essential. Its picturesque hikes, breathtaking views, and a plethora of water activities, from paddleboarding to kayaking, create an unforgettable Fort Collins experience.

What makes Momos unique?

What is the story behind how Momos got its start?

Momos is the product of a culinary journey inspired by a passion for food and a desire to share it with the community. While I may not have a professional culinary education, my expertise has been honed through diverse travel experiences, both domestic and international. The realization struck during my travels that there was an untapped enthusiasm for diverse and authentic flavors in my own community.

Learning through hands-on experiences and numerous taste tests, I recognized a growing appetite for more ethnic food in Fort Collins. This realization, coupled with the encouragement of those who sampled my creations, sparked the decision to share my culinary passion on a larger scale.
